one, two, three, four five...

One, two, three, four, five.
Once I caught a fish alive,
Six, seven, eight, nine ,ten,
Then I let it go again.
Why did you let it go?
Because it bit my finger so.
Which finger did it bite?
This little finger on the right.

Or to be more precise my little to on the right...
and left and middle...

In fact, my whole foot.

Lsp treated us to a fish pedicure this afternoon...

those little fish get everywhere..

it was fun and my feet are smoother..

and all the fish lived to munch again...

a tale of 2 pies...

My Bil, is over for a weekend visit. we only get to see him a couple of times a year as he lives in the far east.
When he comes we sometimes eat out or I cook for us all.

Tonight I am cooking for him. As he travels with work he gets to eat foods from all over the world. so when he is with us I like to cook quite traditional English/Scottish food.

When we were in Scotland last we picked up some nice wild venison, which I popped into the freezer.

For lunch I made a nice Autumn Vegetable soup and for dinner we are having Venison pie. However, as LSP is intolerant to Venison and OD does not want to eat Bambi, I am making 2 pies 1 venison, 1 chicken.

I love wild venison, it is a very lean meat that is low in cholesterol and very tasty. The animals live in the wild and feed off the land. They are shot in the wild, not taken to an abbetoir. Also Scottish Venison need to be culled each year.

1st one, venison....ok so I am starting this at 3.15pm. venison is best cooked slowly, so it starts life as a casserole then will have its lid put on later.

each pie will serve 4.

350g cubed venison.

3 carrots
2 leeks
1/4 swede
3 small onions
2 stalks celery
6 chestnut mushrooms

handful of flour.
oil for frying.

1/2 pint red wine
glug of vinegar
2 tsp mustard
1 teaspoon marmite
1 teaspoon nutmeg
2 stock cubes
1 teaspoon pepper.
salt

1/2 pack of ready made puff pastry.
1/2 egg for egg wash.

I like to layer my fillings in this deep pie, this will ensure that everyone gets equal and also I think it makes a difference to how it cooks.

Start by frying the venison to brown. then when sealed on all sides take off the heat and place in a bag of flour with pepper to coat, drain the juices and place in a jug.

Fry the onions and place in the bottom of a casserole dish.
then place the floured venison on top of the onions.
next add a layer of thickly sliced mushrooms.

Fry the celery and leeks together and make the next layer.
Finally cube the swede and cut thick chunks of carrot. lightly fry then add to the pot.

I brown all of the veg except for the mushrooms, I do not use lots of oil. the reason is that it has a positive effect on both the taste and colour of the final dish.

In the jug with the meat juices add the mustard, marmaite, stock cubes, nutmeg and pepper. salt and a glug of vinegar. you can use red wine vinegar, I used malt.

put the wine in the pan and de-glaze (get the bits off) then add the wine to the rest of the juices, add 1/4 pint of water then pour over the filling as well as adding 2 sticks of rosemary.

place in the oven at 180 degrees. and sit down with a cup of tea!

ok time to get started on the next pie....

 2 chicken breasts
2 onions
1 leek
1 celery stalk
1/8 swede (about the size of the palm of your hand)
4 chestnut mushrooms
3 carrots.

1/2 pint chicken stock
dried tarragon
2 teaspoons mustard.
pinch salt/pepper

1/2 pack of ready made puff pastry.
1/2 egg for egg wash.

slice and fry onions, place on bottom of  a thick pie dish.
cut the chicken into large chunks. (this is a pie to sit and eat at the table so you will want nice big chunks to cut into) and brown in the pan, then toss into the pan some quartered chestnut mushrooms.

place over the onions then fry the celery and leek. when lightly fried add to the dish.
Finally chop the swede and carrot, lightly fry and add to the top.

this has a lighter sauce than the venison, just 1/2 pint chicken stock, mustard and tried tarragon.

Now instead I have covered this in foil to cook and will add a pastry top later, this is because of how I am cooking the venison pie.

I cooked the venison for 3 hours and the chicken was cooked for an hour before lidding.

30 mins before you need to serve, cover with puff pastry. and egg wash. The venison pie also does well with a suet pastry as well.

As you can tell, I do not trim the pastry, the square bits get tucked in. this works well if you like pastry and gives you those nice stodgy bits...

they produce a very ugly but tasty pie! If you wanted a more attractive pie, then you could cook the puff pastry seperatly then place on top of the spooned mixture.

I am serving both of these with mashed potato and shredded cabbage. as they are both rich and filling they do not need very strong veg and the mash will go nicely as a change of texture.

hope you enjoy them as much as we did.......

Midweek catch up....

Well, isn't life busy!!!

work is very silly busy! everyone is off enjoying their children in the half term....(colleagues that is).

and its dark!

Its dark when I wake and its dark when I come home... so I am currently experiencing some seasonal adjustment... (otherwise known as being in a bit of a mood)

We are adjusting to having 4 in the house again....its nice but still a process.

I am broody..... (not for a baby) but miss having young children... I was lucky that BFL let us borrow her one for the night... was fab, she is such a sweet baby, we are looking forward to having her again. so much so we have gone and ensured our toybox is stashed with suitable toys...

ok so we have...animal headbands (her favourite), bagpuss, minnie mouse, a train set and some building blocks. is only a small toybox and I have to resist temptation to fill it!

We are preparing for a family visit at the weekend will be nice to catch up but trying to get room prepared before the weekend is going to be a bit of a push...

Tomorrow LSP and I are going to a leaving party! will be a happy/sad occasion. Sad to see this person leave as they have done a good job and will be missed...but pleased for them at the same time.

Tonight is movie night...so this morning I put a chicken and butternut squash curry into the slow cooker and returned home to a house that smelled of curry..mmmmm....It was worth throwing stuff into the slow cooker franticly at 07.30am (so that I could get to a 08.30am meeting! yes 08.30, I told you work was busy)

Christmas is coming and I still have not sorted out the stockings yet! (yes it is important, the children are doing stockings for each other and they need to be given the stockings before they buy things that are to big)

Last night was a late night home from work..so no nice fancy dinner for us, there were no young people so we had beans on toast ! yum (Heinz of course)

YD has just got home and given me and LSP some tickets to see Rocky Horror at the Cinema on Monday!!! I feel dressing up may be required!!!!

Also we are trying to get in as much cycling as possible.....my favourite answer to most things now is "After Vietnam" Although at the moment I have no Passport or Visa (Passport is at the Vietnamese Embassy) yes we had an incident with the passports getting to Cambodian Embassy........

Weather wise....my gosh we have had sunshine, rainbows and torrential rain!!!

here are some random photo's from this week....

hope you have a good week and I will catch you at the weekend.....

Don't forget the lyrics...

I was going to write a post about Saturday nights and how they change as they get older.
However, I have been diverted. I was going to use a lyric from David Bowie's Drive in Saturday.

As I read them on-line, I realised, I have been singing completely the wrong lyrics all of my life.
I then started to look at more lyrics and realised that I had been getting them wrong as well...

Which has brought me back to the main idea of what I was going to post about..Saturday nights...

In my teens Saturday nights were all about going out, socialising, drinking.....
In my twenties, it was about recovering from a day with the children where we had been playing etc.
Now I am in my mid 30's the children occupy themselves or get entertained by a short hop round the shops or a coffee in a coffee shop.

What has become of the Saturday night?

Looking up stuff on the internet, catching up on I-player, reading blogs, playing scrabble with LSP, facebook,  tv,

now the dark nights have drawn in I want to be doing something with my hands, however. my carpel tunnel syndrome is playing up a lot at the moment. I cant manage more than 2 rows of knitting without my hands locking up, its so frustrating!

I have so many pre Christmas jobs to do as well....

We need new stockings this year.

For the first time We will not be doing stockings for the children this year.

They are doing each other's,

so we need 6 stockings.

1 for OD
1 for YD
1 for SE
1 for LSP
1 for the dogs
oh yes and 1 for me.

I have picked up some lovely fabric.
from IKEA...

I just need to work out the sizes.

hmm.. I have just worked out what I do on Saturday nights...

I relax, I think, I plan, I do very little...

Is that such a bad thing.. my life is busy, my work fries my brain,
what about you??

changes

It is 7.30am,
On  a Saturday morning,
I am sat in the sitting room,
wearing nothing but a blanket,
The only sound is the washing machine,
and the breathing of Dog1,
YD is in London,
LSP is still in bed,

However .... all this is set to change as later today...

SE is going to stay with us for a while.

He needs some
Nurturing,
Motivating,
Encouragement,
Support,
Routine,

So I am going to savour and relish this moment, sat in the peace and quiet, in a blanket, with a cup of coffee and a labrador because in a few hours time...its all going to change.

love my bike, hate my bike....

My Bike...

I am mainly loving my bike at the moment but have started to make some mistakes....
After 2 rest day's I got on the bike and cycled to the next village to meet a friend to go on a day's training.

Friend only lives 7 miles away so I set off in the dark and cycled into the wind.... it was slow going. However got there in an hour, which is not to bad (I average 10mph on the bike usually).

Now, its a delicate issue but, when cycling often you can get a sore posterior, the more you cycle the less it bother's you. However, on  Monday I did not relish sitting on a hard chair all day !!!! There was a bit of fidgeting going on, I can tell you.

Well, we got back from the conference, had a cup of tea then I cycled back.... Monday was windy.
At one point it was so windy it blew me off my bike. yes seriously, right off!

If I had been riding a bit faster it would have been better, but no there I was cycling along then falling sideways!!! (I pushed my bike for a bit till there were hedges again)

Yesterday was a bigger cycle day. 30 miles.

Seems like a lot but was not to bad.... until I fell off.

yes again.

This time....I was standing still....yes standing still.

Standing with my bike on the kerb, balancing and before I knew it I was under my bike, in a bit of tangled heap!!! It was a shock to me.. and to the car driver who watched it happen...
Apart from a bobo on my knee, I was fine. just confused with dented pride.

As I said, love my bike/hate my bike!!
I was quite perplexed... so was the car
